There is a great Netflix music documentary series This is Pop. Covers all sorts of things, Boys II Men, country music, Scandinavian pop music producers, Brit-pop, auto-tune and more!

Almost one year after this initial thread, here's a list of what I've seen in the past year, Music doco-wise.
Milli Vanilli When Metal Ruled the 80's (4 parts) Madonna & The Breakfast Club (Madge's early years) Public Image is Rotten Rolf - Hiding in Plain Site Black Pop Popmaster (UK chart/music quiz show) Wham: Echoes from the Edge of Heaven Donna Summer: Love to Love You (this had a few timeline holes in it) The Stones and Brian Hones (their early years) Aaron Carter Ed Sheeran: The Sum of it All Britpop (90's UK scene, 4-part series) John Waite George Michael Outed Spice Girls: How Girl Power changed Britain Fight the Power: How Hip-Hop Changed the World Hip Hop Homicides Stock, Aitken & Waterman Sometimes When We Touch: The Rise of Yacht Rock Madonna at the BBC Sinead O'Connor: Nothing Compares
And I just got the new Robbie Williams four-part series today, so that's the weekend's viewing sorted.
^^I've seen the VICE "Story of" one featuring Eiffel 65, that was pretty good and I should check out some more of that series.
Other than that I would also recommend the Foo Fighters' 8-part Sonic Highways series as a really nice overview of different cities in the US and their musical history. It honestly doesn't matter if you like the band or not, because it's mostly about the music scenes of the various cities featured and how they each developed their own styles.
There was also a documentary I found on YT about the infamous Norwegian black metal band Mayhem which I thought was fascinating, but it's also pretty dark subject matter and definitely not for everyone.
